• Desi chana should be uniform in size and shape, with a rough, wrinkled surface. The chana should be dark brown or black in color.

• Desi chana should have a maximum aflatoxin level of 20 micrograms/kilogram. Aflatoxins are toxins produced by certain molds that can cause serious health problems, including liver cancer.
