Urad Dal
- Urad dal should be uniform in size and shape, with a smooth, slightly glossy
surface. The dal should be black or dark brown in color.
- The moisture content of urad dal should not exceed 12%. High moisture content can
lead to spoilage and mold growth.
- Urad dal should be free from foreign matter, such as stones, dirt, and other debris.
The maximum allowable amount of foreign matter is typically 1.0%.
- Urad dal should have a minimum of 95.0% sound kernels. This means that no more than
5.0% of the kernels can be damaged, broken, or diseased.
